Duck Fritons + Beaver Town Neck Oil + Camden Brewery Off Menu IPA.
Duck Fritons were our first ever product. Known in the South of France as Fritons de Canard they are a rural delicacy found in every butchers and charcuterie of the region and justifiably hold the nick-name Gascon-Crack!
Free Range Duck Skin cured with sea salt, rendered down and cooked gently in its own fat (confit) for 3-5 hours until golden, slightly crispy and intensely delicious.
Served in the South of France with the powerful red wines of the region, high in fruit and high in tannin. I love the way modern hoppy IPA beers mirror this style of wine - lots of fruit, lots of tannin.
They work incredibly well together. You'll find that the Duck Fritons balance the IPA out and make the fruit flavours explode (it's the simple combination of fat and salt in the Duck Fritons which is responsible for this magic).
Beavertown Neck Oil and Camden IPA are two of my favourite beers right now and they make this experience the very best it can be.
Serving Suggestion:
Enjoy half a beer before eating the Fritons to experience the impact they have on the flavour of the beer.
