    Our Chicharrónes are also commonly called cortezas de cerdo in Spain and are a lighter, deeply savoury and super crispy version of the traditional Black County pork scratching loved in the UK.

    They are enjoyed across Spain as a traditional aperitivo or tapas and made by rendering the fat from the pork skin, drying out the remaining cooked meat and flash fry them,  so they puff up and crisp up. They are a little bit like that small super crispy and bubbling pork crackling that you sometimes achieve (hardly ever) when you totally nail a Sunday roast.
